Method:
Melt EOI Monarch with the sugar, mix until blended and bring to the boil.

Add to Group 1 and mix in well.

Method:
Add Group 3 to a mixing bowl. Pour in Group 1 and mix through until combined.
Chocolate ganache topping

Method:
Melt the chocolate in a bain-marie then whisk in the EOI Solite until combined. Pour over the cooled slice and allow to set before cutting.

Make up Procedure
Line a tray with grease proof or silicon paper. Lay the mixture on the tray and roll out to the desired thickness with rolling pin. Top with EOI Solite chocolate ganache and cut into the desired shape.

Bring EOI Monarch and sugar to the boil so it will cook the egg.
